From Dishwasher to Paradise Chef, Young Penncrest Grad on the Culinary Fast Track

William “Will” Lochetto, a Penncrest High School 2015 graduate, is only 23, yet he’s already joining a renowned culinary team at a top-rated restaurant in a tropical Hawaiian resort, writes Peg DeGrass for the Daily Times.

Not bad for a guy who started out at age 15 as a dishwasher at Azie Media.

While there, Lochetto discovered a love of Japanese cooking and pursued culinary arts schooling.

As a high school senior, Lochetto won a cooking competition and a scholarship to The Restaurant School at Walnut Hill College in Philadelphia

He went on to earn an associate degree in culinary arts in 2017.

He interned at CoZara in University City, worked as a line cook at Stephen Starr’s The Love, and was the first cook hired at the new Jean-George’s Philadelphia.

Then he found an opportunity he couldn’t pass up, joining the culinary team at Sensei by Nobu at Sensei Lanai, Hawaii, a luxurious wellness enclave with a new dining concept by Chef Nobu Matsuhisa.

He arrives at his island paradise Oct. 18.

“This truly is an opportunity of a lifetime,” Lochetto stated. “Being a new property, the position will give me lots of room to grow.”
