Aston Woman Proves If You Can Dream It, You Can Bake It
Kit Spayd, owner of West Branch Baking Co. in Brookhaven, wasn’t going to put off her dream any longer, writes Peg DeGrassa for the Daily Times.
“Some people thought I was nuts to open a business in the midst of the pandemic,” Spayd said. “But I figured that was just another excuse to delay following a dream of mine. If it wasn’t the pandemic, it would be something else and I’d never take the leap of faith, so I just went for it!”
Spayd, from Aston, signed the lease for her bakery at 8 Brookhaven Road last August. She opened in December 2020.
The bakery stays away from pre-made baked goods, focusing instead on customized, made-fresh orders.
The bakery makes Italian bread, cakes, cookies, holiday treats, cheesecakes, cinnamon rolls, cupcakes, dessert breads, cannoli, and mini cakes. It recently added hand-churned crafted ice cream, sold in pints and 8-ounce cups.
It supplies Neumann University, LaSpada’s, Manbroso’s To Go and other local businesses.
Spayd has high praise for the Delaware County business community and said local business owners have been welcoming and generous in sharing information, especially in the pandemic.
