Testa Rossa Glen Mills Opens Dec. 6 in the Former Ruby’s Diner
Testa Rossa officially opens today, Dec. 6, at the former Ruby’s Diner in the Shoppes at Brinton Lake, 919 Baltimore Pike, in Glen Mills.
Fearless Restaurants, owners of White Dog Cafes and several other restaurants in the region, has opened a vibrant, casual Italian Restaurant.
According to Fearless Restaurants, Testa Rossa is a restaurant born in Italy but raised in America with a menu heavily focused on house-made pizza, pasta, and Italian favorites.
“Our menu is a mashup of Italian and American cuisine. We romantically embrace Italian culinary technique while unapologetically breaking all the ‘rules’ we just don’t feel like following,” according to Culinary Director Merick Devine, who also leads the kitchen at Rosalie Wayne.
The menu features Italian classics, elevated riffs of American-Italian staples, and new dishes that fall somewhere between, Devine said.
It features house-made pasta like its sister restaurant Rosalie Wayne.
For snacks and apps, there are selections of salumi, Italian meat products (some brought in, some made in-house), cheeses, and salads. Dessert includes soft-serve gelato, Chinotto floats, and tableside Tiramisu.
The restaurant was designed by Stokes Architecture +Design of Wayne using 1960s-inspired bold patterns and geometric prints positioned against Ferrari red moments, giving the room a mid-century Italian maximalist allure.
There are 180 seats indoors including booths, a large center bar, and an additional 100 seats outside on the patio.
Before leading the kitchen at Rosalie, Devine was executive chef at White Dog Cafe in Wayne. He has also worked at Frasca Food and Wine in Colorado for over six years.
“I don’t have a romantic story about sitting around my Italian grandma’s stove and watching her stare deeply into a pot of Ragu,” Devine said. “That’s not how my passion for Italian cooking started.”
In fact, he didn’t even really like to cook, but he liked to eat.
It wasn’t until college that he started buying cookbooks and skipping classes to test new recipes.
“It was during this time that my career and path was ignited,” he said..
His love for pasta making came while traveling in Italy, working at different restaurants.
Fearless Restaurants is an expanding collection of restaurants led by restaurateur Marty Grims and his daughter Sydney Grims.
Fearless Restaurants owns the landmark Moshulu Restaurant on Penn’s Landing. Locally, it owns White Dog Cafe in Wayne, Haverford and Glen Mills and Chester Springs;, Autograph Brasserie, and Rosalie in Wayne
Coming in 2025, a second Testa Rossa and Triple Crown Restaurant will open in Wayne.
