Pastry chef Emily Riddell, who runs Machine Shop in the Bok Building at 1901 South 9th Street in Philadelphia, landed on the Food & Wine Best New Chefs 2022 list, writes Khushbu Shah for Food & Wine.

Riddell honed her knowledge for years while working in California, for prolific restaurateur Stephen Starr, and later at Philadelphia’s legendary French restaurant Le Bec-Fin.

She has spent more than a year planning out Machine Shop, where she is now offering one of the few perfect viennoiserie pastries in America.

The shop, which officially opened in 2017 as a wholesale operation but added a retail space this year, became so popular that Riddell had to work 363 days out of the year – something she is determined not to repeat in the post-pandemic era.

In addition to being named one of the best new chefs, Riddell’s Machine Shop has found its place on The 15 Best New Restaurants in America list published by Eater.

The publication dubs Machine Shop one of the best French bakeries in the country “where the croissants are light and buttery-rich, the focaccia is airy and chewy, and the tangy lemon cream tarts fill the case in tidy rows.”
