How Lancaster County’s Shady Maple Smorgasbord Thrives Amidst Buffet Industry Struggles
While many buffet restaurants are struggling and several all-you-can-eat chains have declared bankruptcy, Shady Maple Smorgasbord in East Earl continues to thrive, report Abby Narishkin, Mark Adam Miller, and Dorian Barranco for the Business Insider.
On the weekends, there are thousands of people from all over the country who wait in line to enjoy the traditional Pennsylvania Dutch fare at America’s largest buffet. The restaurant serves roughly 1.2 million people a year.
To get everything going, the cooks start prep at 4 AM.
“We’ll go through about 700 to 750 pounds of bacon,” said Sumer Smith, Food Quality Manager at Shady Maple.
Saturdays are the eatery’s busiest days.
“The energy is high,” said Smith. “It’s like our Super Bowl.”
The chefs honor Mennonite and Amish traditions as they prepare a ton of different dishes. One of the local delicacies is scrapple, which is ground-up liver.
The restaurant also goes through 700 eggs just to prepare the Saturday morning meals.
The staff makes sure that all food is fresh and always available by monitoring the trays closely and calling for more food to refill any that are running low.
