V Empanadas Brings Latino Flavor to Wayne Farmer’s Market

Veronica Fitzgerald, owner of V Empanadas, is making cultural inroads with a popular Latin American comfort food offered at the Lancaster County Farmer’s Market in Wayne, writes Marcella Baietto for CBS News Philadelphia.

V Empanadas is the first Latina-owned business to have a stand at the farmer’s market, which dates back to 1929.

Fitzgerald shares her heritage through the golden-brown empanadas that are combined with different sweet and savory fillings.

She first started making the go-to meals in 2009 for friends and family. It was a way to keep her Ecuadorian culture after moving to the U.S. with her family at age 14.

“I just decided to teach myself how to make some of the things that brought me back to when I was young and my tradition,” she said.

The market vendor makes about 3,000 of them a month. Fitzgerald can hand-make 65 of them in an hour.

“We have a lot of people around here that work and support this market that is Latin, but to actually have the spot and to offer Latin food to people here is amazing,” she said. 

Other Latin small businesses also showcase their products at her stand.
