Former Ruby’s Diner in Glen Mills to Become Testa Rossa
The former Ruby’s Diner space in Glen Mills was to become the third location of Rosalie, an Italian soul food restaurant with other locations in Wayne and Long Beach Island.
Those plans are now changed, writes Emma Dooling for Philadelphia Business Journal,
Instead, the location at 919 Baltimore Pike in the Shoppes at Brinton Lake will be home to Testa Rossa, a casual Italian-American concept.
The announcement came from Fearless Restaurants, owner of the White Dog Cafe chain.
The decision to change the style of the restaurant came after learning more about the area and its demographics, said Sydney Grims, the hospitality group’s director of development.
She and Marty Grims run Fearless Restaurants.
“We feel as though the area had a void for a fun, vibrant Italian-American restaurant, and we wanted to fill that void,” Grims said.
Testa Rossa is expected to open next summer.
Chef Merick Devine of Rosalie’s Wayne location will lead the restaurant’s culinary operations. He has previously served as executive chef at the White Dog Café in Wayne.
The restaurant will have homemade pasta with a focus on pasta, pizza, Italian appetizers, salads, and desserts.
